		<description>@Meghan: I am thinking of ignoring my carrot top soup I have planned in favor of using this exact same method to make an asian-ish eggplant (because even with that oil, it still has to be healthier than frying.  I was thinking of filling it with black bean sauce and the other leek fried down... and instead of thawing some meat, I thought I'd dice up (half?) a zucchini to add to the filling.</description>
